The Novy Svet Champagne Winery in Crimea is located in one of the most picturesque villages of this peninsula. Sparkling wine in Novy Svet began to produce winemaker Lev Golitsyn in 1878. Over time, his wine was highly appreciated not only in Russia, but also won the Grand Prix at various competitions in Europe, including at the World Exhibition in Paris in 1900.

The history of the creation of the Novy Svet Champagne Winery begins in the second half of the 19th century. A representative of the ancient dukely family Lev Golitsyn, who studied winemaking in Europe, decided to engage in its development in the Russian Empire. In 1870, the first sparkling wine Winery in Russia, Abrau-Durso in the Kuban, was already established . Duke Golitsyn in 1878 acquired land in a cozy bay near Sudak and founded his own champagne Winery here.
The village in the Green Bay, 7 kilometers from Sudak, was called Paradise in the 19th century. It appeared here in the Middle Ages under the Genoese, but it was a small fishing village. After the construction of Duke Golitsyn`s house and the Champagne Winery, life here was transformed. Now in the House of Duke Golitsyn there is a Museum of winemaking of the Crimea.
At the beginning of the 20th century, a resort village began to form here. According to one version, it received the name Novy Svet after a visit in 1912 to the Duke Golitsyn Winery by Emperor Nicholas II and his retinue. After being treated to sparkling wine in Chaliapin `s Grotto, the emperor said: "I see everything in a Novy Svet now." So, the words Novy Svet became a trademark for the famous sparkling wine from the Crimea. At the same time, one of the beaches in the vicinity of Novy Svet was called Royal Beach. It is located at the end of the Golitsyn Trail. The royal family went swimming there during their visit.
In large volumes, sparkling wine began to be produced at the Novy Svet Champagne Winery in 1884. The main trademarks were Paradise, Cuvee, Novy Svet, Coronation, Pinot-Fran. In the rocks of Koba-Kaya and Karabul-Oba cut tunnels where champagne was aged according to the traditional technology of fermentation of wine in bottles. The tunnels are located at different heights to maintain different temperatures. Now these tunnels can be visited during the tour.
In one of the tunnels of Novy Svet Lev Golitsyn kept his famous Enoteka. There, he collected about 30 thousand rare wines of the 18th and 19th centuries. Alas, but to this day this Enoteka has not been preserved in Novy Svet. After the revolution of 1917, the champagne Winery was looted, and the remains of the Enoteca were transported to the Massandra Winery in Yalta.
